Healthy Breakfast Stir Fry
What’s so different about our Healthy Breakfast Stir Fry is a little known root vegetable called Jicama. Jicama is very similar in texture to a turnip with a taste closer to an apple. Jicama is low in calories and high in some vital nutrients. The great thing about Jicama is its starch content – or lack of. In contrast with the tradition of root vegetables being high in starch- Jicama is not- in fact Jicama is a bit of a contradiction when it comes to its starch content.
One serve of Jicama provides one-quarter of what’s needed daily in fibre. But it gets even better- Jicama is full of not just any fibre – jicama’s fibre is infused with the oligofructose inulin!

Healthy Breakfast Stir Fry
Makes 2 servings
1 Tablespoon cold pressed Coconut Oil or olive oil
1 Small yellow onion- diced
100grams of any meat of your choice- or you can use salmon
3 cloves of garlic- (local and organic is best), minced
2 Cups of cubed Jicama
Sprinkle of mixed dried herbs: paprika, cracked pepper, onion powder, Cayenne pepper, dried oregano, sage, thyme and Sea salt.
Add oil and diced onions to a large frying pan.
Cook on medium – high heat for 5 minutes- stirring frequently.
Add diced meat and garlic and cook for 3 minutes, continuing to stir.
Drop in cubed jicama, herbs and sea salt.
Cook for a total of 10 minutes, adding 1 Tablespoon of water every couple of minutes and stirring to avoid burning.
Serve with eggs- poached, sunny side up or slices avocado.
