Almond Crusted Zesty Chicken Schnitzel with Greens

- 1 kilo chicken breast fillets – sliced in lengths.
- 3 Tablespoon arrowroot
- 2 Large organic / free range egg- beaten
- 2 Cups Grounded Almonds
- 3 lemons
- 4 tablespoons parsley chopped
- Steamed green broccoli to serve
- Coconut Oil for light pan frying.
Method
In a bowl, combine almonds, the zest of 2 lemons and parsley.
Lightly coat the chicken breast in the arrowroot then dip into the egg mix followed by the almond mix.
Cook over a low heat in a pan using Coconut oil until lightly golden and chicken is cooked through.
Serve alongside steamed green vegetables or any vegetables of your choice with a squeeze of lemon over the top of the Broccoli and lemon wedge on the side! Yumo!
There will be enough chicken for left over’s if serving four!
