Serves 2

Ingredients:

  • 2 pieces of Salmon approx 200grams each
  • 1/2 Teaspoon Oregano
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Sea Salt and Cracked pepper
  • 2 small Organic Lemons
  • Ghee or Coconut oil

Method:

  • Pre heat oven to a moderate temperature ( 160-180degrees)
  • Pour or place just enough oil over bottom of your baking dish
  • Place your salmon in the dish and sprinkle herbs over the top of each fillet
  • Slice one lemon in half and squeeze the juice of one lemon over each fillet
  • Drop dollop or pour a little more oil over each salmon
  • Slice the 2nd lemon in half, then each half into even slices. Place lemon slices over the salmon pieces.
  • Bake for 10 mins- Oven time may slightly vary dependant on your oven and preference for cooked fish.

Serve with steamed green beans and mashed sweet potato!
