Lemon and Green Herb Baked Salmon

Ingredients:
- 2 pieces of Salmon approx 200grams each
- 1/2 Teaspoon Oregano
- 1/2 Teaspoon Thyme
- 1/2 Teaspoon Sea Salt and Cracked pepper
- 2 small Organic Lemons
- Ghee or Coconut oil
Method:
- Pre heat oven to a moderate temperature ( 160-180degrees)
- Pour or place just enough oil over bottom of your baking dish
- Place your salmon in the dish and sprinkle herbs over the top of each fillet
- Slice one lemon in half and squeeze the juice of one lemon over each fillet
- Drop dollop or pour a little more oil over each salmon
- Slice the 2nd lemon in half, then each half into even slices. Place lemon slices over the salmon pieces.
- Bake for 10 mins- Oven time may slightly vary dependant on your oven and preference for cooked fish.
Serve with steamed green beans and mashed sweet potato!
