Salmon fishcakes or patties, with lemon and parsley, isolated on

 

Provides 4 Patties

Ingredients:

  • 170grams of cooked Salmon- well drained if you are using canned.
  • 1 x Tablespoon of coconut flour
  • 2 eggs beaten
  • 3 Tablespoons minced shallots
  • 3 cloves of fresh garlic grated or minced
  • Sliced Shallots- i used 2 full stems
  • 1 x Teaspoon of Rosemary
  • 1 x Teaspoon of Paprika
  • Sea Salt and cracked pepper
  • 1 Tablespoon of Organic Brown Mustard- Eden Foods has a apple cider vinegar mustard i like.
  • Coconut oil to cook

 

Method:

  • Combine all ingredients except for coconut flour. Once mixture is combined well , check for consistency. If your mix is a little runny- add small amounts of coconut flour until desired “patty worthy” consistency is reached.
  • Mould your salmon patties into desired shape and size
  • Add coconut oil to a pan and heat to medium temperature.
  • Add patties to the pan and allow to cook. Once browned, turn and cook through.
  • You can serve Salmon patties hot or cold- salmon patties make a great easy grab snack to keep in your fridge for a couple of days
