Provides 4 Patties
Ingredients:
- 170grams of cooked Salmon- well drained if you are using canned.
- 1 x Tablespoon of coconut flour
- 2 eggs beaten
- 3 Tablespoons minced shallots
- 3 cloves of fresh garlic grated or minced
- Sliced Shallots- i used 2 full stems
- 1 x Teaspoon of Rosemary
- 1 x Teaspoon of Paprika
- Sea Salt and cracked pepper
- 1 Tablespoon of Organic Brown Mustard- Eden Foods has a apple cider vinegar mustard i like.
- Coconut oil to cook
Method:
- Combine all ingredients except for coconut flour. Once mixture is combined well , check for consistency. If your mix is a little runny- add small amounts of coconut flour until desired “patty worthy” consistency is reached.
- Mould your salmon patties into desired shape and size
- Add coconut oil to a pan and heat to medium temperature.
- Add patties to the pan and allow to cook. Once browned, turn and cook through.
- You can serve Salmon patties hot or cold- salmon patties make a great easy grab snack to keep in your fridge for a couple of days
